Stainless can be welded with stick, TIG, and MIG. Although TIG is the most common process for welding stainless as far as I know.

The gas pedal is for the welding current, up or down, depending on material thickness and/or needed heat input. The wire you use when TIG welding is (almost) always fed by hand.

When MIG welding the wire does feed through the welding gun on torch.
