We have those wild plants over here too. I think it is western salsify but I'm no expert.

Edible roots that taste like parsnip.

no, I haven’t done anything in that area but mow.  It was about a month ago, or so.

I grew salsify years ago, we called it oyster root and made oyster stew with it.  I never had a bloom like that, so maybe that is unique to the wild version.
