Shelter at Home recipe ideas..Do not shoot the possum

As I pointed out previously the current Toilet paper shortage is probably the result of people having to eat there own cooking for the first time...

 

 

So today looking for some new food ideas i looked at my 1963 Joy of Cooking

 

DO NOT Shoot the possum feed him... they are edible

No really.... they are tasty.... Beverly Hillbillies knew. Been to a couple of wild game feeds where we had oppsum, beaver and coon shanks.

Black bear is the only bear meat I have eaten. 

     I did find  trichinosis worms in a bear I harvested in northern Quebec in the early '70s.  I only kept the hide, as I knew I would never be able to consume the meat.

I never hunted bear again.

In PeeAaa it is actually illegal to waste the meat of any harvested  big game animal i.e.  deer, bear, turkey, and elk.

I know 2 muskrat recipes.  one has you clean him Attach him to a cedar plank.  Spice him with several seasonings cook in front of a hot fire.    Then toss the muskrat and serve the plank, or this one.

My Mom cooked everything we harvested. One I liked was coon stew. Of course, we hunted away from the dumps and trash piles. Did not Hunt Opossum.

Only bears (other than me 🐻 )  here in Maine is black bears.

 

Folks eat bear.

I've never had it. Been told it's a tad greasy.

We have black bear all the time , when tags are issued of course, and it is delish. I have a big folder of bear recipes and the ones that are really good are dog eared. Yes it can be a tad greasy. . If not prepared right. It all starts in the field. You should know about that Ed. It's a  big job butchering one properly but when done right.... Then ther is bear sausage and bear jerky and bear chili... :icecream:

Black Bear roast done on the grill tastes a lot like beef, maybe a little sweeter than beef. MMM MMM!! :)

I have harvested a few black bears, they are safe to eat, need to be cooked through. Not my favorite but not bad. Like most game the young ones are the best. I liked to grind it with venison, makes good sausage. I don't target bears, but the Berkshires now have to many, and the season overlaps with deer season. The state wants hunters to help reduce the population of bear, so if I get an opportunity, I will take one.

Some day I may tell the story of the first bear hide I tanned.    Seems the only porcelain container big enough for the project was Mrs. Ks bathtub.     

Lessons learned;

1. Bear grease does not come off

2. Do not tangle with an irate Mama Bear

 

 Anyway, the new bathroom is pretty nice.
