That's what I'm takin Ed! :handgestures-thumbupright:I take one of those football roasts out of the hind quarter and brine it in maple cure. Slow smoke for 6 hrs then slice paper thin... serve with white sauce over toast points, biscuits or mashed taters....now that's good eats!

I debone and cure one entire back quarter.    Waffles also make a good shingle.    Oh, I like to add a can of mushrooms to the mix and plenty of fresh ground pepper.

It is Ritchie. ..what's better you can use the same meat to make some absolutely  killer Reubens as it is alot like pastrami or dried beef with a zing. If I had an abundant supply I would make some for us at the BS. Kind of a lean year tho... yer gonna have to settle for some WI cheese! :)

My plate would have that same pepper grinder sitting in front of it Ed! :occasion-xmas:
