Maybe I’ve already shared this, but if you grill packets of salmon, a little (lot) butter, a jar of mandarin oranges and smothered in Sweet Baby Ray’s original bbq.....  heaven in a foil liner!

MMMMMMM salmon :drool: :drool:  Never tried it smoked before, usually get it baked when I go out to eat and grill it when I do it at home.  Best one I ever had was when my uncle came out from Seattle and brought about 4 pounds he bought fresh the morning he got on the plane from Pike Place Market and grilled it up with some homemade rub he got from a friend of his

Yes, we caught them in Lake Michigan last Tuesday.  The 3 pieces on the grill are one fish...about 8 lbs.  The 4th is a couple of cavity fillets that I had from before.  We are going to try to go again tomorrow or Tuesday...depends on the wind. :occasion-xmas::orcs-cheers:

I used Maple this time...I was out of Hickory and Apple.  I have to say...the Maple is a very good alternative .

That looks good. Nothing beats a Good chop of meat done right on a smoker. I’m not a smoke guru but I have used orange wood before and it was good. We did a turkey for thanksgiving last year. Turned out great.

Richie, I did a 14 lb turkey on this grill some years ago.  I brined the turkey for 24 hours.  This kind of grill does a colder smoke then if you used...like a Webber.  A lot of the heat and smoke leaks out at the top and underneath.  It took 12 hours and a 5 lb bag of charcoal to do that bird...used plenty of Hickory pieces also...but Man...that was the best turkey I ever tasted.  Plenty of moisture in the meat still.  A lot of people are brining turkeys now days...and for good reason.  What kind of grill did you use??

   Another good choice is to brine and do chicken halves...excellent fair.  Catfish are excellent also.  :occasion-xmas:

it was just a small electric smoker I had but it made such a great turkey. I had also smoked two whole chickens weeks before. I used apple juice in the water pan and a rub of brown sugar/Cajun seasoning. Chopped up an apple and stuffed inside them. Came out great.
