I wanna get some knowledge on the WH automatic transmissions before I plan this project. Pros and cons?

I'm thinking of taking either a wheel horse or a deere and making it an 11 horse briggs and a hydro.

What are you going to use it for??  Eaton 1100s are excellent hydros.  I only have one.  I prefer my Sunstrands (I have 6 or 7) but I have figured out how to work on them.  Never tackled an Eaton.  Also the Sundstrand hydro lifts work immediately on start up  Some Eatons make you wait awhile.

As an aside if you are going to work on hydros you are going to need a much cleaner work area that shown in your engine tread.  Dirt is a deadly enemy of hydros.

It would be a tractor used for the more common ground engaging attachments and yard work. Would be an interesting show piece. Believe me, the work area is a lot cleaner than it looks. It's mainly heavy dirt, the kind that doesn't really get kicked up.

Hydros are a good choice for a lot of uses.Variable ground speeds are a plus if that is important to your plans.Heat and increased maintenance are the down side.Heat from heavy use breaks down the relative low viscosity oil in a hydro so regular oil and filter changes are needed to assure long life. The gear drives are bullet proof with sufficient oil levels.I have both and like them all but for ease of maintenance the manual gets my vote.JMHO,since you asked.
