persof 14 #1 Posted July 23, 2013 (edited) This year I planted about 200 beet seeds in three 25' rows and almost all of the seeds germinated. Needless to say I have lots of beets. Besides pickling, there is slicing, cook, and freeze; and because they are a root vegetable there is the old time method of storing in a root cellar as is (as long as there isn't excessive moisture or water to cause molding).
