Prater 75 #26 Posted April 7, 2012 We aged ours until the mold started, thats what our family always did... Took about 30 to 40 days in the cooler and once the mold began it was ready. Trouty56 567 #27 Posted April 7, 2012 My son in law shot a doe for me last fall (when it was colder than the winter we had) and I let it hang 4 weeks. When I did butcher it was just starting to mold. While I was cutting it up we had the frying pan there searing steaks as we went. Tender and tasty. It was like picking strawberries.....one steak for the freezer...one steak for me.
