Any Smokers out here?

Hi all. Since it is too cold to do anything outside? I was googling stuff I am sure I need (but, probably don't). I was looking at upgrade stuff for my smokers. I use 2 actual smokers. 1. Chargriller Grand Champ XP. 2.Chargriller clam top. Both offsets. My third option is my old Weber kettle grill with smoker setup. I also have a very good restored (by me) Members Mark Pinnacle series gas grill that I bought at an auction. All have been modified and work very well. Grilling is fun. But, I really like smoking. I can't convince myself to try a pellet grill/smoker yet. I like tending the pit myself with different woods. Oak and Maple are by far my favorites.

That is one sweet rig. I couldn't justify one that big with just the 2 of us here. Did you paint the logo on yourself? What is your preferred wood?

This topic has come up many times before and always great.

 

I haven't smoked with a real smoker for years and when I did it was pretty much for smoking summer sausage, hot sticks & the occasional jerky. 

 

Went pellet smoker and never looked back but I like a intense smoke flavor that you just can't get with pellets. Sure you can get the nice smoke ring but just not the same flavor. It's alot like cooking on charcoal vs gas. 

Dan and I have a buddy that smokes or cooks on nothing but a Weber and his stuff is off the hook.

There is a guy here that makes & smokes his own bacon is it @Beap52????

I only double smoke bacon I purchase at local grocery store.  It just enhances the flavor.  In fact, we had some of my double smoked bacon  and fried mush for breakfast this morning.  Pam likes her mush with butter and salt and pepper.  Me, I like plenty of butter and clear Karo syrup. 

 

It seems that I have seen postings of fellows who cure and smoke their own pork bellies. 

 

Part of the "gardening" section is "recipes."  A couple of weeks ago I talked about "curing ham" and smoking fresh pork shoulder.  I will be doing that again we were really happy with results. 

 

These fellows here make my setup look like a tonka toy--but it's all fun.

I use mostly oak and hickory.  Occasionally apple and cherry wood but it’s difficult to come up with.  I smoke mostly pork or chicken and I enjoy trying new side dishes like Mac and cheese and others.  I have also smoked pizza and some desserts like brownies and pies.

I have a large Chargriller pellet smoker (Can smoke 4 pork butts at once) and a Green Mountain Davey Crockett. The Davey Crockett is one of the first things to get loaded when going camping or to a tractor show. I also have vertical smoker that I built myself out of an old water heater, it is a charcoal & wood. I like the results that I get from my vertical smoker, just don't always have time to baby sit it.

 

Advantage of the pellet smokers - I can get as much or as little done as I want while the meat is smoking. Example : Pork butts or brisket need to be ready for a noon meal. Throw the meat on the smoker at 11:00pm, go to bed, wake up around 6:00am to check on the food. Once you get used to the convenience of a pellet smoker it's a little hard to go back. :twocents-twocents: 

 

A Weber can be a great smoker as well. My buddy can run his Weber at 225 for 8+ hrs using the snake trail method. 

 

Hickory and cherry are my 2 favorite woods to smoke with.

Awesome smoker.

I use a Traeger pellet grill all summer.

We absolutely love it.

I also use a chargrill charcoal and wood, mostly oak and some hickory..  I smoke brisket, london broil, wings, turkey. We used to smoke mullet for fundraisers at local Fire Department and school. If you ever get a chance give that a try! Huge trailer smoker made from water tank, lots of prep and good ol boy secret ingredient recipe!

I’ve had just about every type of smoker available at one point in time. I currently use my pellet grills and electric smoker. Love the convenience of not having to tend to the fire.

Let's see. This was posted about 20 hours ago, so I guess that brisket is gone by now. Just drove through Myersville yesterday on my way home from Sharpsburg. I thought I was smelling something mighty tasty.

It has pellet smoke. Wood smoke. Propane heat .
