pretty close to the one @Achto shared a couple years back in the recipe section.  Instead of a gallon of veggie broth, we had chicken broth in stock.  1 cup of kosher salt (not table salt).  We also used about 3.5 tbs of poultry seasoning, and about a tbs of herbs de province.  I heated up 1/2 the broth on the stove to dissolve the dry stuff, then set it out on the deck for an hour to cool.  I then dumped the broth mixture, the rest of the broth, and a gallon of ice water into the bucket, then the bird.

I've been brining my turkeys for years, the thought of brining a baby never crossed my mine till now:angry-nono:.

My turkey is soaking in a bath of brine as well. Just for a side dish, I injected a brisket & gave it a good rub down. Will be putting them both on the smoker at 0'dark thirty, our dinner is at noon.

Do you inject first, then rub?  Or do you rub first, then inject?

 

I usually rub the night before, then inject just before smoking.

I like to inject & rub both the night before. Then I vacuum seal it for its over night rest. I think it allows all the flavors to get to know each other first before hitting the smoker the next day.

Must be one heck of a shrink wrapper to do a whole bird??

Well shrink wrap me a  left over smidgen of both. My carcass is back out in the woods with a trail camera watching it.

Those little Char-Griller's are an awesome grill. I have one that I use all the time. Perfect grill when your cooking for 2 or 3 people.

Absolutely.  BBT loves it.  

She's used it for twice that many people too. 

Just takes planning.
