Pullstart 63,330 #1 Posted November 27, 2024 Don’t store your babies next to your buckets! Also, my turkey is all dirty. A good soak in the bath tub will help. 3

Brine recipe Kev?? pretty close to the one @Achto shared a couple years back in the recipe section. Instead of a gallon of veggie broth, we had chicken broth in stock. 1 cup of kosher salt (not table salt). We also used about 3.5 tbs of poultry seasoning, and about a tbs of herbs de province. I heated up 1/2 the broth on the stove to dissolve the dry stuff, then set it out on the deck for an hour to cool. I then dumped the broth mixture, the rest of the broth, and a gallon of ice water into the bucket, then the bird. 1

Achto 28,083 #14 Posted November 27, 2024 My turkey is soaking in a bath of brine as well. Just for a side dish, I injected a brisket & gave it a good rub down. Will be putting them both on the smoker at 0'dark thirty, our dinner is at noon. 2

Or do you rub first, then inject? I usually rub the night before, then inject just before smoking. Edited November 27, 2024 by Pullstart

Then I vacuum seal it for its over night rest. I think it allows all the flavors to get to know each other first before hitting the smoker the next day. OH, you probably meant to say the turkey carcass, never mind. Have a happy Thanksgiving.
