Great thread idea Steve.

 

Trina does at least 99% of the cooking in our household. That is not an exaggeration. The only thing I cook so to speak, on a regular basis, is my boiled, camp, cowboy coffee.

 

I'll be following along watching to see what happens here.

The Canadian Prairies were mostly settled with Ukrainians, Russians, Swedes and a handful of Scott's left behind after the Hudson's Bay posts closed up shop.

 

The old pioneer cemetery's all have a tale to tell, and you now have a chance to experience the home cooked meals they enjoyed after a hard days work or those made for special occasions like weddings and such.

 

Everyone attending a wedding brought a dish to share with the guests, these recipes are yours to enjoy and share with others.

 

On side note refrigeration in those days was non existent so you may find some of the meat recipes rather spicy.

 

Beef used to hang ( age ) for 28 days, now your lucky if it sees 14.

 OK I don't quite have as much is BC gold has but to start out with here it is. It's called beef and bean round up . Family 

eats it up and great for left overs!

 

1 1/2 lbs ground beef

1/4 cup chopped onions

1 cup  barbeque sause we like baby rays

1 Tsp brown sugar

1 16 oz  baked beens

1 bag of frozen tater tots

1 bag of sharp chedder shreded

 

 

 Brown ground beef and onions drain and stir and barbecue sauce and brown sugar with cheese and beans. Heat until bubbly. Pour into 2 1/2 quart or 9x11 casserole pan and layer with tater tot's on top. 

Place in oven for around 20 minutes and then add cheese on top of the tater tot's and bake an additional 15.

Venison / Dumpling casserole  I make at deer camp   

I use venison steak and tenderize it by pounding both sides with a tenderizing mallet until it is 1/2 the original  sliced thickness.

  It not only tenderizes, but also allows the gravy to soak into the meat.

Mrs K  made a double recipe of this casserole today, so I grabbed a few pics of the assembly.

 

Browning the steak and place in the bottom of the baking dishes.

Add the onions then pour on the sauce.  We put it all in the casserole.

Prebake, then add the dumpling dough.

I wanted to share my favorite pork tenderloin sandwich. I had a hard time finding a giant breaded pork tenderloin before and after the state fair here in Iowa so I did some investigation and learned how to make them myself at home with just a few simple ingredients.

I buy butterflied pork chops at my local meat market.

I ask that they run them through the tenderizer 2 times . This makes them flatter and 2 to 3 times bigger for a sandwich.

I then set up a station to flour them then egg wash then Panco bread crumbs.

In a non stick skillet with veg. oil after the oil is hot  I fry until golden brown on both sides.

Simple and effective enough that my family and in laws ask for them instead of burgers and hot dogs on the grill for our summer and holiday get together's 

Potato salad and cold pork and beans with some chips are great sides. My wife brings several kinds of melons she grows in her garden also.

Love the lowa state fair ! Went every year 

growing up lots of great memories! Do they still have the full size butter cow? That was my favorite!

Well, It might not be so much a recipe, but anything local is always best.  Venison burgers harvested out back, eggs gathered halfway there (sorry I broke the yolk!), and pork raised by my brother in-law’s father in-law.

I get requests to make this for many gatherings as well as requests for the recipe. Make a meal out of it by topping with some boneless fried chicken tenders. :)

 

Broccoli bacon salad

 

My modifications

 

Ingredients:
1 head broccoli
6 to 8 slices cooked bacon, crumbled
(1 pkg. precooked, nuke crispy & pat grease off)
1/2 cup chopped red onion(adjust to taste, sweet if preferred)
1/2 cup raisins, optional(2-1 oz boxes, adjust to taste)
8 ounces sharp Cheddar, cut into very small chunks(Kraft crumbled 3-cheese mix)
1 cup mayonnaise
2 tablespoons white vinegar
1/4 cup sugar
1/2 cup halved cherry tomatoes
(1 cup, adjust to taste, quarter if needed)
Salt and freshly ground black pepper

1/3 cup Dry Roasted Sunflower Kernals


Directions:
Trim off the large leaves from the broccoli stem. Remove the tough stalk at the end and wash broccoli head thoroughly. Cut the head into flowerets and the stem into bite-size pieces. Place in a large bowl. Add the crumbled bacon, tomato, onion, raisins sunflower seeds, and cheese. In a small bowl, combine the remaining ingredients, stirring well. Add to broccoli mixture and toss gently.

 

I’ve never found the Kraft crumbled 3-cheese mix at Publix, only Walmart. I like it a lot better than just cheddar.

I saw an advertisement in my local weekly news paper that a meat market in my area had smoked heat and eat pork chops on sale. I jumped on it!!!

I don't have a recipe except they have already been cooked and only take a minute to warm up in the microwave after a busy day of being retired.

The perfect sandwich with bbq sauce your choice and I find tomato soup or Bushes southwestern style pinto beans and some potato chips are a great side for a quick supper. :thumbs2:
