D_Mac 8,829 #1 Posted November 4, 2024 (edited) So a few months ago I responded to an ad on CL for a free Traeger Tailgate Smoker. Went and got it. Cleaned it up. Used it a half dozen times and sold it for 200 bucks. Not bad for free. Well yesterday I saw another ad on CL for a free smoker at the curb. Said didn't know if it worked or not. I hmmm'ed and hawwww'ed and weather I should take the drive to see if it still was there. Ad had been up an hour. We'll I told Jeffrey to get in the truck and we went for a little ride to go see. 15 mins later I was struggling to try and get it in the bed of my truck. So heavy. I wasn't going to leave it. Tore my legs up some getting it up and in but I did it. Came home and unloaded it. Wheeled it over to the garage. Plugged it in. Works like a champ !!! Can't believe people just toss these out. It's a Pit Boss 820 ps1. I like it even better then the Traeger. It's larger and more features. Can't wait to use it. Most likely sell it like the last one. Anyone have a favorite rib recipe ? Set the smoker at 225, throw the ribs on the grate for 3hrs. After that wrap them up tight in foil & put them back on for 2hrs. When this time is up, remove the foil and add your favorite sauce (if you wish to sauce them). Put them back on the smoker for 1hr to glaze the sauce or just crisp up your rub. Have fall off the bone ribs with a deep smoke ring every time. Easy as 3-2-1. Edited November 4, 2024 by Achto 4 2

Achto 27,844 #4 Posted November 4, 2024 @D_Mac 6hrs is a long time to wait for your ribs to cook. You might want to throw on some stuffed poblano peppers for an appetizer to hold you over while you wait for the ribs. And don't forget some apple pie and left over pie crust cinnamon rolls for desert. I may use my smoker a lot. 1 4
D_Mac 8,829 #5 Posted November 4, 2024 I do the mustard and dry rub for a couple of hours. Then I pull them off and rub them with brown sugar and honey. Wrap then in foil for another couple of hours. 1
D_Mac 8,829 #6 Posted November 4, 2024 @Achto pellet smoker ? If so what kind of pellets?

Generally use Bit Boss pellets Competition blend for beef, fish or side dishes. Will drop them out and use Bear Mountain cherry & hickory that I blend together for pork. If you can find some pecan pellets, they add a nice spicy bite to meats. Edited November 5, 2024 by Achto
Pullstart 63,122 #8 Posted November 5, 2024 Anyone ever done pecan pie? Yum!
8ntruck 7,145 #9 Posted November 5, 2024 Not pecan, but I've done apple pies in cast iron dutch ovens over a camp fire. 1
Achto 27,844 #10 Posted November 5, 2024 Most anything that can be cooked in an oven, can also be made in the smoker to add some smoke flavor. @8ntruck We did an upside down peach cake in a dutch oven. It was amazing!!
WHX?? 49,282 #11 Posted November 5, 2024 Nobody gonna comment on what a lucky but stupid guy Mac is? He's giving them away free again. That pit boss was 700 plus smoker all day and the Trager is a $$ grill too. Both brands the Cadillac of smokers. I woulda kept them and have them stacked up like cordwood on the deck ... Back ups like tractors! 1 hour ago, Pullstart said: So easy a caveman can do it! I'm about as stupid in giving them away and by the looks of the 702 so ain't @stevasaurus 1
D_Mac 8,829 #12 Posted November 5, 2024 I just dont have the space to keep everything. I live in the city and really don't have a yard. My garage and shed are packed full. I live in western NY and anything left outside will be covered in snow soon. I may be stupid fir selling them, but not as stupid as the previous owners that gave them away for FREE !! @WHX?? I can get you a deal on a nice Pit Boss. Only used on sundays by a Lil old lady after church. 1 1

Achto 27,844 #15 Posted November 5, 2024 Spare ribs are good too, just thicker bone & a little less meat.

D_Mac 8,829 #18 Posted November 5, 2024 I'm not a baker but boy do I love cakes and pies. I will stick with the meats for now. With the last smoker I did a couple of pork loins, chicken, and some baby backs. I'm still learning and don't want to ruin a nice expensive piece of meat. This pit boss is nice because it has a sliding heat plate so you can open it to grill or sear on open flame. It also has a removable warming rack. The Traeger didn't have those. Wish I could use it this weekend but to much going on. I still need to go get some pellets. After I get a couple different bags I will choose my meat. Anyone smoke a turkey breast ? I was considering that.

I would treat it like chicken, Cook at 275 - 300 degrees until meat temp reaches 165. !65 is the safe point for any poultry I usually run my bone in poultry meat temp to 185, still stays juicy but comes off the bone better than it does at 165. I use a pellet tube for cold smoking cheese & deviled eggs. Do not light the grill, light the tube and place it in the grill to get smoke with very low heat. I like best to cold smoke when it is below 30 degrees outside. You can cold smoke when it is warmer outside by placing your food above a pan of ice. The ice will help keep the food cold while smoking. D_Mac 8,829 #24 Posted November 7, 2024 Well I used the Pit Boss today. St Louis style ribs and Caramel Apple Pie. 6 hours on the smoke. Came out delicious. Have not had a slice of the pie yet. My only regret there is that I don't have any vanilla ice-cream to go with it. Here some photos from start to finish.
D_Mac 8,829 #25 Posted November 24, 2024 So yesterday I figured I would get some more use on the smoker before I trade it away. Smoked pork chops and scalloped potatoes. Came out really good. Starting to get the hang of it and now regretting trading it away. Oh well
