Treepep 564 #1 Posted January 9 Peppered bacon. Brined a week. Rinsed. Cold smoked 4 hours. I prefer black birch. I had peach and red oak 80/20. So I used that. Can't bring myself to dispatch healthy trees. Tasty stuff 3 6 1

rmaynard 15,510 #4 Posted January 9 Makes me hungry just looking at the pictures. Not to get this thread off the tracks, but what is your preferred method of cooking your bacon. I used to pan-fry mine in cast iron, but now with four growing grandsons, I can't keep up when they come for "Bob's" breakfast. So I have gone to a large sheet pan in the oven at 350 till crispy.

kpinnc 12,083 #9 Posted January 9 (edited) I started cooking bacon outside on the Blackstone griddle. As clearly stated previously, I love bacon. I just don't like the house smelling like it for 24 hours afterwards. @rmaynard how does the stove method work out? Always wanted to try that, especially with some brown sugar and... I need to shut up before I end up in the dang kitchen! Edited January 9 by kpinnc

I need to shut up before I end up in the dang kitchen! My daughter-in-law does it in the oven when ever we sleep over. It's excellent. Me, I still use my OLD (it was old when I got it) cast iron pan. Hard to break old habits.

I need to shut up before I end up in the dang kitchen! Lay out the bacon slices on a pan that's about 1/2" deep. Put it in a 350 degree oven for about 20-30 minutes. Keep an eye on it and when the bacon gets crispy, remove the pan and place the strips on paper towel to soak up the grease.

Yep oven till crispy/chewy the way we like it. Cast iron is all I cook with so that would be the close second option.
