Processing Chickens and Geese

Recommended Posts

Pullstart

Saturday we’re processing birds.  We have 120 ish chickens to do and the 6 geese.  We were going to see about reproducing the geese with an incubator, but they are eating all my stuff!  They’ve damaged the camper undersides, chew the chicken tractor netting, etc.  They gots to go.

I was given this stainless steel countertop.  I built a pressure treated stand for it, and now I’m plumbing some work station flusher faucets.

Hoping you’ve got cones, scalding tank, plucker and chill tank lined up too.

Short answer?  Yes.  Not everything is set up yet!

Time to find that old Wheel Horse mounted chicken plucker build thread.   Somewhere in the "Strangest Implement Post"

Full service ranch.....pull starting to chicken plucking! We have it all!

Need to set up a automatic rotisserie at the end of the line.

Maybe a Michigan meet and greet. :eusa-think:

@Joey Small Block I have a claim from the family that they won’t be chicken hungry for a while.  It seems every time we process animals (deer, rabbit, etc) I get the same speech about it until we give it a taste!

You might want to consider digging large pit for the flushing water to run off. I have never done the quantity of birds you are about to process but know that the flushed water that is left over will have an unpleasant odor and will attract all sorts of critters.

I could have used one of those when I was hand plucking 50 -60 fryers a week during my high school summer days back in the 50s.

For the most part, I think I’m ready to try it out!

I need to check the burner on the scalding pot, verify we have enough LP, and keep making ice.  We’ll have an ice water bath for the processed birds to cool before vacuum packing.

Looks well planned and designed Kev, but I didn't see the first step.    Is that coming in the MAO version?

Hey Kev,  don't let your butchering crew miss that little nugget if meat above and in front of the wing.    It's small, but the best nugget on a bird.  :techie-eatcursor:

We aren’t planning on any cuts other than gutting obviously, and necks.  Are we clear of the happy nugget?

Looks like a good set up @Pullstart. Only issue I would question is the same one made by @953 nut.

Where are all the feathers and wash going? Coming out of the bottom of the plucker? That could be a real mess. I'm sure you probably have thought that one through too. Good luck and Happy Plucking!

Yep, it'll be on each side at the front of the back bone.

I could have used your bird processing plant this morning.    A flock of 50 long neck honkers landed in the old sweet corn that was chopped yesterday.  I had to keep them herded away from the new broccoli  that was planted last week.
