Just need grade 8 bolts. Take yours to the hardware store to match the thread and pitch and length

Yes 5/16 X 1 1/2' Grade 8. I use flange head bolts when I can but not necessary.

Help me understand why to use new head bolts?

 

These are not 'torque to yield' as used in many automotive applications, which always get replaced.

 

At 25-30 ft/lb of torque, those head bolts are certainly not being 'stretched'.

 

What am I missing?

Heat stress for 1 thing. Quite often I find the bolt threads all goobered up from rust, carbon, gunk , carbunkles ect . Cheap (fairly cheap insurance)

I just rebuilt a k-181 and noticed a couple of them were questionable by the exhaust mainly and would come loose even after re torquing  a couple time so decided to replace.

Cheap insurance as Mr Squonk noted .
